Ingredients
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
3 carrots, diced
3 celery stalks, chopped
2 medium potatoes, diced
1 can (14 oz) diced tomatoes
1 can (6 oz) tomato paste
4 cups beef broth
1 cup water
1 teaspoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon smoked paprika
Salt & black pepper to taste
1 bay leaf
Optional: 1 cup frozen peas or green beans, 1/2 teaspoon red pepper flakes, 1 teaspoon sugar
Instructions
- Brown the Beef – In a large pot over medium heat, cook the ground beef until browned, breaking it apart with a spoon. Drain excess fat if needed.
- Sauté the Aromatics – Add the diced onions and minced garlic. Cook for about 2 minutes until fragrant.
- Add Vegetables – Stir in the diced carrots, celery, and potatoes. Cook for another 3–4 minutes.
- Incorporate Tomatoes and Tomato Paste – Stir in the diced tomatoes and tomato paste to coat the ingredients.
- Add Broth and Seasonings – Pour in the beef broth and water, then add Worcestershire sauce, oregano, basil, smoked paprika, salt, pepper, and the bay leaf. Stir well.
- Simmer the Soup – Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes until vegetables are tender.
- Final Touches – If using, stir in frozen peas or green beans in the last 5 minutes of cooking. Adjust seasoning if necessary.
- Serve and Enjoy – Remove the bay leaf, ladle into bowls, and garnish with fresh parsley if desired. Serve hot.
