Ingredients

1 baguette or French bread loaf, sliced

1 tablespoon olive oil

1/2 lb (225g) raw shrimp, peeled and deveined

1 tablespoon butter

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

4 oz (115g) cream cheese, softened

1/2 cup shredded mozzarella cheese

2 tablespoons mayonnaise

1 tablespoon chopped green onions or parsley (plus extra for garnish)

Paprika or chili flakes for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Slice bread into 1/2-inch pieces and place on a baking sheet. Lightly brush tops with olive oil and bake for 6–8 minutes until crisp. Set aside.
  2. In a skillet, melt butter over medium heat. Add garlic and cook for 30 seconds. Add shrimp, season with salt, pepper, and red pepper flakes. Cook 2–3 minutes per side until done. Chop shrimp into bite-sized pieces.
  3. In a bowl, combine cream cheese, mayo, mozzarella, and chopped green onions or parsley. Mix until smooth.
  4. Fold in cooked shrimp into the cheese mixture.
  5. Spoon mixture generously over each toasted bread slice.
  6. Return to oven and bake for 10–12 minutes, or until cheese is bubbly and slightly golden. Broil for 1–2 minutes for extra crispiness if desired.
  7. Garnish with fresh herbs, paprika or chili flakes.
