Ingredients

4 boneless, skinless chicken thighs

1 tablespoon olive oil

Salt and black pepper to taste

1 cup cooked white rice (for serving)

2 tablespoons chopped green onions (for garnish)

For the Bang Bang Sauce:

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey

1 teaspoon rice vinegar (optional)

Instructions

  1. In a small bowl, mix the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth. Set aside.
  2. Season the chicken thighs with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Add chicken thighs and sear for 4-5 minutes per side until golden and cooked through.
  4. Reduce heat to low and pour the sauce over the chicken. Turn to coat each thigh evenly. Let simmer for 1-2 minutes.
  5. Serve chicken over white rice, drizzle with extra sauce, and garnish with green onions.
