Ingredients

1/2 head of green cabbage, chopped

1 large onion, diced

2 carrots, peeled and sliced

2 celery stalks, sliced

2 cloves garlic, minced

1 bell pepper, chopped

1 can (14.5 oz) diced tomatoes (with juice)

6 cups vegetable broth (or chicken broth)

1 tsp olive oil

1 tsp dried basil

1/2 tsp dried oregano

1/4 tsp crushed red pepper flakes (optional)

Salt and black pepper to taste

Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add diced onions, carrots, and celery. Sauté for 5 minutes until they start to soften.
  3. Stir in garlic and bell pepper. Cook for 2 more minutes until fragrant.
  4. Add chopped cabbage and the can of diced tomatoes (with juice).
  5. Pour in the broth and season with basil, oregano, crushed red pepper flakes, salt, and black pepper.
  6. Bring soup to a boil, then reduce heat and simmer covered for 25–30 minutes.
  7. Stir occasionally until all vegetables are tender.
  8. Taste and adjust seasoning. Serve hot, garnished with fresh parsley if desired.
