Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

12 oz andouille sausage, sliced into rounds

1 tablespoon olive oil

1 small onion, diced

1 bell pepper (red or green), diced

2 celery stalks, chopped

3 cloves garlic, minced

1 (14.5 oz) can diced tomatoes, with juices

1 1/2 cups long-grain rice, uncooked

3 cups chicken broth

2 teaspoons Cajun seasoning

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add andouille sausage and cook until browned. Remove and set aside.
  2. In the same pot, add chicken pieces, season with salt and pepper, and cook until browned. Remove and set aside.
  3. Add onion, bell pepper, and celery to the pot. Sauté until softened, then stir in garlic.
  4. Add diced tomatoes, Cajun seasoning, smoked paprika, salt, and pepper. Stir well and cook for 1–2 minutes.
  5. Return chicken and sausage to the pot. Stir in uncooked rice and chicken broth. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20–25 minutes or until rice is tender.
  7. Let rest for 5 minutes, then fluff with a fork.
  8. Garnish with chopped parsley and serve hot.
