Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 medium potatoes, peeled and cubed

1 bell pepper, diced

3 cups chicken or beef broth

1 can (10 oz) diced tomatoes with juice

2 cups shredded cheddar cheese

1 cup heavy cream

2 tbsp butter

2 tbsp all-purpose flour

1 tsp Worcestershire sauce

1 tsp mustard (yellow or Dijon)

1 tsp smoked paprika

Salt & pepper to taste

Optional: Chopped fresh parsley, crumbled bacon, extra cheese for garnish


Instructions

  1. Brown the Beef: In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Drain excess grease and set aside.
  2. Sauté the Vegetables: Melt butter in the same pot, then add diced onions, carrots, and bell pepper. Sauté for 3-4 minutes. Add minced garlic and cook for 30 seconds.
  3. Build the Base: Sprinkle flour over the vegetables, stir, then gradually add broth while stirring. Add potatoes and diced tomatoes. Bring to a simmer.
  4. Simmer Until Tender: Cover and let cook for 12-15 minutes, or until potatoes are fork-tender.
  5. Add the Cheese and Dairy: Reduce heat to low. Stir in the cooked beef, Worcestershire sauce, mustard, paprika, salt, and pepper. Slowly add cheese, stirring until melted. Pour in heavy cream and stir gently.
  6. Final Touches and Serve: Adjust seasoning if needed, then let the soup simmer for 2-3 more minutes. Garnish with parsley, bacon, or extra cheese. Serve warm.
