Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
2 medium carrots, diced
2 medium potatoes, peeled and cubed
1 bell pepper, diced
3 cups chicken or beef broth
1 can (10 oz) diced tomatoes with juice
2 cups shredded cheddar cheese
1 cup heavy cream
2 tbsp butter
2 tbsp all-purpose flour
1 tsp Worcestershire sauce
1 tsp mustard (yellow or Dijon)
1 tsp smoked paprika
Salt & pepper to taste
Optional: Chopped fresh parsley, crumbled bacon, extra cheese for garnish
Instructions
- Brown the Beef: In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Drain excess grease and set aside.
- Sauté the Vegetables: Melt butter in the same pot, then add diced onions, carrots, and bell pepper. Sauté for 3-4 minutes. Add minced garlic and cook for 30 seconds.
- Build the Base: Sprinkle flour over the vegetables, stir, then gradually add broth while stirring. Add potatoes and diced tomatoes. Bring to a simmer.
- Simmer Until Tender: Cover and let cook for 12-15 minutes, or until potatoes are fork-tender.
- Add the Cheese and Dairy: Reduce heat to low. Stir in the cooked beef, Worcestershire sauce, mustard, paprika, salt, and pepper. Slowly add cheese, stirring until melted. Pour in heavy cream and stir gently.
- Final Touches and Serve: Adjust seasoning if needed, then let the soup simmer for 2-3 more minutes. Garnish with parsley, bacon, or extra cheese. Serve warm.
