Ingredients
1 lb smoked sausage, sliced into thick rounds
1 lb baby potatoes, halved
12 oz fresh green beans, trimmed and halved
1 cup shredded cheddar cheese (plus extra for topping)
1 can (10.5 oz) cream of mushroom soup
1/2 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper to taste
Olive oil for cooking
Optional: chopped parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish.
- Boil halved baby potatoes in salted water for 8–10 minutes until just fork-tender. Drain and set aside.
- In a skillet, heat olive oil and sear sausage slices for 2–3 minutes on each side. Add onion and garlic, cook until fragrant.
- In a bowl, mix cream of mushroom soup, milk, Italian seasoning, salt, pepper, and 3/4 cup cheese.
- In the baking dish, combine cooked potatoes, sausage mixture, green beans, and cheese sauce. Stir to coat evenly.
- Sprinkle remaining cheese over the top.
- Cover with foil and bake for 25 minutes. Uncover and bake for another 10–15 minutes until golden and bubbly.
- Let rest for 5 minutes, garnish with parsley, and serve hot.
