Ingredients

1 lb smoked sausage, sliced into thick rounds

1 lb baby potatoes, halved

12 oz fresh green beans, trimmed and halved

1 cup shredded cheddar cheese (plus extra for topping)

1 can (10.5 oz) cream of mushroom soup

1/2 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

Olive oil for cooking

Optional: chopped parsley for garnish


Instructions

  1. Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish.
  2. Boil halved baby potatoes in salted water for 8–10 minutes until just fork-tender. Drain and set aside.
  3. In a skillet, heat olive oil and sear sausage slices for 2–3 minutes on each side. Add onion and garlic, cook until fragrant.
  4. In a bowl, mix cream of mushroom soup, milk, Italian seasoning, salt, pepper, and 3/4 cup cheese.
  5. In the baking dish, combine cooked potatoes, sausage mixture, green beans, and cheese sauce. Stir to coat evenly.
  6. Sprinkle remaining cheese over the top.
  7. Cover with foil and bake for 25 minutes. Uncover and bake for another 10–15 minutes until golden and bubbly.
  8. Let rest for 5 minutes, garnish with parsley, and serve hot.
