Ingredients

For the Chicken Marinade:

2 boneless, skinless chicken breasts (or thighs)

2 tablespoons olive oil

2 tablespoons lime juice (freshly squeezed)

2 teaspoons chili powder

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

For the Tacos:

8 small corn tortillas

1/2 cup white onion, finely diced

1/2 cup fresh cilantro, chopped

Lime wedges, for serving

Optional Toppings:

Avocado slices

Crumbled queso fresco

Sliced radishes

Salsa or hot sauce


Instructions

  1. Marinate the Chicken – In a bowl, whisk together olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, and black pepper. Coat the chicken evenly, cover, and refrigerate for at least 30 minutes (up to 4 hours).
  2. Cook the Chicken – Heat a cast-iron skillet or grill pan over medium-high heat. Cook the chicken for 5-6 minutes per side, or until fully cooked (internal temp 165°F). Let rest before slicing into bite-sized pieces.
  3. Warm the Tortillas – Heat tortillas over an open flame or in a dry skillet for about 30 seconds per side. Keep them warm in a clean kitchen towel.
  4. Assemble the Tacos – Add sliced chicken to each tortilla. Top with diced onions, fresh cilantro, and a squeeze of lime juice. Add any extra toppings you like.
  5. Serve & Enjoy – Serve immediately with extra lime wedges and salsa or hot sauce on the side.
