Ingredients

For the Chicken:

2 boneless, skinless chicken breasts

2 tbsp olive oil

1 tbsp chipotle powder

1 tsp smoked paprika

1 tsp cumin

1/2 tsp garlic powder

1/2 tsp onion powder

Juice of 1 lime

Salt and pepper to taste

For the Bowl:

1 cup black beans (cooked or canned, drained and rinsed)

1 cup corn (grilled or charred)

1 cup diced tomatoes

1/2 cup chopped fresh cilantro

1 cup cooked rice or quinoa (optional)

For the Creamy Sauce:

1/2 cup Greek yogurt or sour cream

1 tbsp chipotle sauce or adobo sauce

1 tsp lime juice

1/2 tsp garlic powder

Salt to taste


Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, chipotle powder, smoked paprika, cumin, garlic powder, onion powder, lime juice, salt, and pepper. Coat the chicken well, cover, and refrigerate for at least 30 minutes.
  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked and charred. Let it rest for a few minutes before slicing.
  3. Prepare the Bowl Ingredients: Char the corn in a dry pan over medium heat for a few minutes if using fresh corn. Rinse the black beans, dice the tomatoes, and chop the cilantro.
  4. Make the Creamy Sauce: In a small bowl, whisk together Greek yogurt (or sour cream), chipotle sauce, lime juice, garlic powder, and salt. Adjust seasoning as needed.
  5. Assemble the Bowl: Divide rice or quinoa (if using) into serving bowls. Arrange black beans, corn, tomatoes, and sliced chicken on top. Drizzle with the creamy sauce and garnish with cilantro. Enjoy!
