2 tbsp olive oil
1 tbsp chipotle powder
1 tsp smoked paprika
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
Juice of 1 lime

1 cup black beans (cooked or canned, drained and rinsed)
1 cup corn (grilled or charred)
1 cup diced tomatoes
1/2 cup chopped fresh cilantro
1 cup cooked rice or quinoa (optional)

1/2 cup Greek yogurt or sour cream
1 tbsp chipotle sauce or adobo sauce
1 tsp lime juice
1/2 tsp garlic powder
