Ingredients

For the Chipotle Chicken

1 lb chicken breast, cut into bite-sized pieces

2 tbsp olive oil

2 tsp chipotle powder

1 tsp smoked paprika

1 tsp cumin

1 tsp garlic powder

Salt and pepper to taste

For the Sweet Potatoes

2 medium sweet potatoes, peeled and diced

1 tbsp olive oil

1 tsp paprika

1 tsp chili powder

Salt and pepper to taste

For the Black Beans

1 can (15 oz) black beans, drained and rinsed

1 tsp cumin

1/2 tsp garlic powder

Salt and pepper to taste

For the Cilantro Lime Sauce

1/2 cup Greek yogurt

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 clove garlic, minced

Salt and pepper to taste

Optional Toppings

Avocado slices

Fresh cilantro

Lime wedges

Cooked rice or quinoa for serving


Instructions

  1. Roast the Sweet Potatoes:
    Preheat the oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tbsp olive oil, 1 tsp paprika, 1 tsp chili powder, plus salt and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes, turning halfway through.
  2. Cook the Chipotle Chicken:
    Heat 2 tbsp olive oil in a skillet over medium heat. Add the chicken pieces and season with 2 tsp chipotle powder, 1 tsp smoked paprika, 1 tsp cumin, 1 tsp garlic powder, and salt and pepper. Cook for 6-8 minutes, stirring occasionally, until the chicken is fully cooked and slightly charred.
  3. Prepare the Black Beans:
    In a pan, heat the black beans over medium heat. Add 1 tsp cumin, 1/2 tsp garlic powder, and salt and pepper. Cook for 3-4 minutes, stirring occasionally.
  4. Make the Cilantro Lime Sauce:
    In a small bowl, mix 1/2 cup Greek yogurt, 1/4 cup cilantro, juice of 1 lime, and 1 minced garlic clove. Season with salt and pepper to taste. Stir until smooth.
  5. Assemble the Bowl:
    In serving bowls, layer cooked rice or quinoa (if desired), roasted sweet potatoes, chipotle chicken, and black beans. Drizzle the cilantro lime sauce generously on top, and finish with optional toppings like avocado, fresh cilantro, and lime wedges.
