Ingredients

1 lb large shrimp, peeled and deveined

8 oz linguine or spaghetti

3 tablespoons unsalted butter

2 tablespoons olive oil

4 garlic cloves, minced

1/4 teaspoon crushed red pepper flakes (adjust to taste)

1/2 cup dry white wine or chicken broth

Juice of 1 lemon (about 2 tablespoons)

Zest of 1 lemon

1/4 cup chopped fresh parsley

Salt and freshly ground black pepper, to taste


Instructions

  1. Bring a large pot of salted water to boil. Cook pasta until al dente, then drain and reserve 1/2 cup of pasta water.
  2. In a large skillet, melt 1 tablespoon of butter with 1 tablespoon olive oil over medium-high heat.
  3. Add shrimp in a single layer, season with salt and pepper, and cook for 1-2 minutes per side until pink. Remove and set aside.
  4. Add remaining butter and oil to the skillet. Lower heat to medium. Stir in garlic and red pepper flakes; cook for 30 seconds.
  5. Pour in wine or broth, scraping the pan to deglaze. Simmer for 2-3 minutes.
  6. Stir in lemon juice and zest, then toss in cooked pasta. Add reserved pasta water if needed.
  7. Return shrimp to skillet, toss to coat everything evenly.
  8. Sprinkle with parsley, adjust seasoning, and serve immediately.
