Ingredients

pounds chicken tenderloins

1 cup buttermilk

1 egg

1½ cups all-purpose flour

½ cup cornstarch

1 teaspoon baking powder

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional)

Vegetable oil for frying


Instructions

  1. In a bowl, whisk together buttermilk and egg. Pour over chicken tenderloins in a zip-top bag or bowl. Marinate for 1 hour (or overnight).
  2. In a separate bowl, mix flour, cornstarch, baking powder, and all seasonings.
