Ingredients

12 oz linguine

1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

2 tbsp olive oil

Salt and pepper to taste

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/4 tsp chili flakes (optional)

4 tbsp unsalted butter

4 garlic cloves (minced)

1 tsp Dijon mustard

1 tbsp lemon juice (plus zest of 1 lemon)

1 tbsp chopped fresh parsley (plus more for garnish)

1/2 tsp crushed red pepper flakes

1/4 cup grated Parmesan (optional, for serving)


Instructions

  1. Bring a pot of salted water to a boil. Cook linguine until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, paprika, and garlic powder. Cook until golden and done, about 5-6 minutes. Set aside.
  3. In the same skillet, melt butter over medium heat. Stir in garlic, Dijon, lemon juice and zest, parsley, and red pepper flakes. Simmer 2 minutes.
  4. Return chicken and add pasta. Toss to coat, adding pasta water as needed to loosen the sauce.
  5. Serve hot with extra parsley and Parmesan if desired.
