Ingredients

3 lbs Russet or Yukon Gold potatoes, peeled and cubed

4 oz cream cheese, softened

1/2 cup milk (warmed)

4 tbsp butter, melted

1 tsp salt

1/2 tsp black pepper

Optional: fresh herbs (chives or parsley) for garnish


Instructions

  1. Peel and cut the potatoes into evenly sized chunks. Place them in a large pot and cover with cold water. Add a pinch of salt.
  2. Bring to a boil over medium-high heat. Reduce to a simmer and cook for 15-20 minutes, or until fork-tender.
  3. Drain the potatoes and return them to the pot to remove excess moisture.
  4. Mash the potatoes using a potato masher or hand mixer.
  5. Add the cream cheese, melted butter, and warmed milk. Continue mashing until smooth and creamy.
  6. Season with salt and black pepper to taste, mixing well.
  7. Transfer to a serving bowl, garnish with fresh herbs if desired, and serve hot.
