Ingredients
3 cups cooked rotini pasta
2 cups cooked chicken breast, shredded or cubed
1 ½ cups shredded mozzarella cheese
½ cup shredded cheddar cheese (optional)
1 cup cherry tomatoes, halved or diced
2 tablespoons olive oil
1 tablespoon minced garlic
1 teaspoon Italian seasoning
Salt and pepper to taste
¼ cup chopped fresh parsley (for garnish)
½ cup heavy cream or whole milk
¼ cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cook rotini pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Add garlic and sauté until fragrant.
- Add cherry tomatoes, Italian seasoning, salt, and pepper. Cook for 2–3 minutes. Remove from heat.
- In a large bowl, combine pasta, chicken, sautéed tomato mix, and cream. Mix well.
- Stir in 1 cup of mozzarella and all the cheddar cheese.
- Transfer to a greased 9×13″ casserole dish. Spread evenly.
- Top with remaining mozzarella and Parmesan cheese.
- Bake for 20–25 minutes, until cheese is golden and bubbly.
- Let rest for 5 minutes, garnish with parsley, and serve hot.
