Ingredients
For the Chicken:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper, to taste
1 tablespoon butter
2 cloves garlic, minced
For the Sauce and Pasta:
8 oz twisted pasta (rotini or fusilli work great)
2 tablespoons butter
3 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
1/2 teaspoon black pepper
Salt to taste
1/4 cup chopped parsley (plus extra for garnish)
Instructions
- Season & Sear Chicken: Pat chicken breasts dry. Season with garlic powder, Italian seasoning, salt, and pepper. Sear in olive oil over medium-high heat for 5–7 minutes per side. Remove and rest.
- Boil Pasta: Cook pasta in salted boiling water until al dente. Reserve 1/4 cup pasta water and drain.
- Make Garlic Sauce: In the same pan, melt butter. Sauté garlic until fragrant. Add heavy cream, simmer, then whisk in parmesan cheese until smooth.
- Combine Pasta & Sauce: Add pasta and reserved water to sauce. Toss with parsley.
- Serve: Slice chicken, place over pasta, and garnish with more parsley and parmesan.
