A rich and comforting soup packed with bold Italian flavors, creamy Parmesan broth, and hearty sausage. Perfect for a cozy meal on a chilly day.
Ingredients
1 lb Italian sausage (mild or spicy)
1 small onion, diced
3 cloves garlic, minced
2 carrots, chopped
4 cups chicken broth
1 cup heavy cream
1 cup Parmesan cheese, grated
1 can (14.5 oz) diced tomatoes, drained
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Extra grated Parmesan (for garnish)
Instructions
- Brown the Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook until browned. Remove and set aside.
- Sauté the Vegetables: In the same pot, add diced onions and carrots. Sauté for about 3–4 minutes until soft. Stir in the garlic and cook for 30 seconds.
- Simmer the Broth: Pour in chicken broth, scraping the bottom of the pot to deglaze. Add diced tomatoes, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Simmer for 10 minutes.
- Add Dairy: Lower the heat and stir in heavy cream and grated Parmesan. Mix well and let simmer for 5 more minutes.
- Combine Ingredients: Return cooked sausage to the pot and let it simmer for another 5 minutes.
- Serve & Garnish: Ladle into bowls and top with fresh parsley and extra Parmesan. Enjoy!
