Description

Ingredients

1 lb Italian sausage (mild or spicy)

1 small onion, diced

3 cloves garlic, minced

2 carrots, chopped

4 cups chicken broth

1 cup heavy cream

1 cup Parmesan cheese, grated

1 can (14.5 oz) diced tomatoes, drained

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Extra grated Parmesan (for garnish)


Instructions

  1. Brown the Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook until browned. Remove and set aside.
  2. Sauté the Vegetables: In the same pot, add diced onions and carrots. Sauté for about 3–4 minutes until soft. Stir in the garlic and cook for 30 seconds.
  3. Simmer the Broth: Pour in chicken broth, scraping the bottom of the pot to deglaze. Add diced tomatoes, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Simmer for 10 minutes.
  4. Add Dairy: Lower the heat and stir in heavy cream and grated Parmesan. Mix well and let simmer for 5 more minutes.
  5. Combine Ingredients: Return cooked sausage to the pot and let it simmer for another 5 minutes.
  6. Serve & Garnish: Ladle into bowls and top with fresh parsley and extra Parmesan. Enjoy!
