1 lb smoked sausage or kielbasa, sliced into rounds

1 tbsp olive oil

1 medium onion, thinly sliced

3 cups baby potatoes, chopped into bite-sized chunks

2 cups sauerkraut, drained (not rinsed)

1/2 cup heavy cream

1 tsp Dijon mustard

1 tsp garlic powder

1/2 tsp caraway seeds (optional)

Salt and pepper to taste

Fresh parsley, chopped, for garnish


Instructions
