1 tbsp olive oil (optional)
1 small onion, finely chopped
2 garlic cloves, minced
1 cup cooked black beans (or 1 can, drained and rinsed)
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp chili powder
Salt and pepper, to taste
1/4 cup salsa
1/3 cup vegan cheese (optional)
10 small corn tortillas (warmed for rolling)
Chopped cilantro and lime wedges for serving

Avocado crema
Salsa or hot sauce
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat. Sauté onion for 3-4 minutes, then add garlic and cook another minute.
- Stir in black beans, cumin, paprika, chili powder, salt, and pepper. Cook 2-3 minutes and lightly mash beans. Mix in salsa and vegan cheese.
- Warm tortillas slightly to prevent cracking. Spoon about 2 tbsp of the mixture onto each tortilla and roll tightly.
- Place seam-side down on baking sheet. Lightly brush or spray with oil (optional).
- Bake for 20-25 minutes, flipping halfway, until golden and crispy.
- Garnish with cilantro and serve with lime wedges and dips.
