Ingredients
For the Batter:
1 ¾ cups (220g) all-purpose flour
1 cup (200g) granulated sugar
½ teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
½ cup (115g) unsalted butter, softened
¾ cup (180g) ricotta cheese
2 large eggs
1 teaspoon vanilla extract
½ cup (120ml) whole milk
For the Chocolate Batter:
¼ cup (25g) unsweetened cocoa powder
2 tablespoons (30ml) hot water
¼ cup (45g) semi-sweet chocolate chips, melted
For the Topping:
½ cup (90g) semi-sweet chocolate chips
2 tablespoons (30ml) heavy cream
¼ cup (45g) chocolate chips, for garnish
Instructions
- Preheat and Prepare the Pan – Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- Mix Dry Ingredients – In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Prepare Wet Ingredients – In a large bowl, beat butter and sugar until light and fluffy. Mix in ricotta cheese, then add eggs one at a time, followed by vanilla extract.
- Combine Wet and Dry Ingredients – Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing until just combined.
- Make the Chocolate Batter – In a small bowl, mix cocoa powder and hot water to form a paste. Stir in melted chocolate chips, then fold in half of the cake batter.
- Create the Marble Effect – Spoon vanilla and chocolate batters alternately into the loaf pan. Use a skewer or knife to gently swirl for a marbled pattern.
- Bake the Cake – Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. If browning too fast, tent with foil.
- Cool the Cake – Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the Chocolate Topping – Melt chocolate chips and heavy cream together until smooth. Pour over cooled cake and garnish with additional chocolate chips.
