Ingredients

4 ripe tomatoes, finely diced

1 small yellow or white onion, diced

2 cloves garlic, minced

1/4 cup fresh basil, chopped

2 tablespoons fresh parsley, chopped

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar (optional)

Salt and freshly ground black pepper, to taste

1 baguette or rustic bread loaf, sliced

1 garlic clove (for rubbing on toast)

Olive oil for brushing bread


Instructions

  1. In a medium bowl, combine tomatoes, onion, minced garlic, basil, and parsley. Add olive oil and optional balsamic vinegar. Season with salt and pepper. Mix and let sit for 10–15 minutes.
