Ingredients

1 lb (450 g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (15 oz) diced tomatoes

1 can (6 oz) tomato paste

1 small onion, diced

2 cloves garlic, minced

2 tbsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp crushed red pepper flakes (optional)

1/2 cup beef broth or water

Fresh parsley or cilantro for garnish (optional)


Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add beans, corn, diced tomatoes, tomato paste, onion, and garlic to your crockpot. Stir to combine.
  3. Add the cooked beef to the crockpot.
  4. Sprinkle in chili powder, cumin, paprika, salt, pepper, and red pepper flakes. Pour in beef broth. Stir well.
  5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  6. Stir before serving. Garnish with fresh herbs or desired toppings.
