Ingredients

1 lb flank or skirt steak

1 tsp dried oregano

Salt and black pepper, to taste

1 tbsp olive oil (plus more for drizzling)

4 cups baby arugula or mixed greens

1 cup cherry tomatoes, halved

1 ripe avocado, sliced

1/2 cup crumbled feta cheese

1/2 cup Kalamata or green olives

2 tbsp chopped fresh parsley

1 tbsp lemon juice

Optional: red pepper flakes for heat


Instructions

  1. Pat steak dry, season with oregano, salt, and pepper.
  2. Heat 1 tbsp olive oil in skillet over medium-high heat. Sear steak 3-4 minutes per side.
