Ingredients
For the Beef:
3 to 4 lbs beef chuck roast (or other tough cut like brisket)
1 tablespoon olive oil
1 large onion, thinly sliced
4 cloves garlic, minced
2 cups beef broth (low sodium preferred)
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
For the Biscuits:
1 can of refrigerated biscuit dough (8–10 biscuits)
1 tablespoon butter, melted (for brushing on top)
For the Cheese:
8 oz provolone cheese, sliced (or Swiss cheese)
For the Au Jus:
2 cups beef broth (low sodium preferred)
1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon onion powder

Cook the Beef
Heat olive oil in your slow cooker or Dutch oven over medium-high heat. Season the chuck roast with salt, pepper, thyme, and rosemary. Brown the beef on all sides (about 4-5 minutes per side). Remove beef and set aside. Add sliced onions and minced garlic to the pot, cooking for 2-3 minutes until softened. Return beef to the pot and pour in beef broth, Worcestershire sauce, thyme, and rosemary. Simmer on low for 6-8 hours in the slow cooker or 3-4 hours in the Dutch oven, until the beef is fork-tender and easy to shred. -
Prepare the Au Jus
In a small saucepan, combine beef broth, soy sauce, garlic powder, onion powder, and a pinch of salt and pepper. Bring to a simmer over medium heat for 10-15 minutes, adjusting seasoning to taste. Set aside. -
Bake the Biscuits
Preheat the oven as per the instructions on the biscuit package. Arrange the biscuit dough on a baking sheet lined with parchment paper and bake until golden brown (about 12-15 minutes). Once baked, brush the tops with melted butter. -
Assemble the Sandwiches
After shredding the cooked beef, slice the biscuits in half and place a generous amount of beef on the bottom half. Top with a slice of cheese and place the biscuit top on. Serve with warm au jus on the side for dipping.
