Description

This French Onion Ground Beef and Rice Casserole is a rich and comforting dish loaded with savory flavors. Ground beef, caramelized onions, and rice are combined with a creamy sauce and topped with a bubbly layer of melted cheese. Perfect for busy weeknights or potlucks, this casserole is easy to make and even better as leftovers!


Ingredients

1 lb ground beef

1 cup white rice (uncooked)

1 large onion, thinly sliced

2 cups beef broth

1 packet (1 oz) French onion soup mix

1 can (10.5 oz) cream of mushroom soup

1 ½ cups shredded mozzarella cheese

1 cup shredded cheddar cheese

2 tbsp butter

½ tsp garlic powder

Salt and pepper (to taste)

Fresh parsley (optional, for garnish)

Crispy fried onions (optional, for topping)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Caramelize the onions: In a large skillet, melt 2 tbsp butter over medium heat. Add the sliced onions and cook until golden and caramelized, about 10-12 minutes.
  3. Brown the beef: Push the onions to the side and add the ground beef to the skillet. Cook until browned, breaking it apart as it cooks. Drain any excess grease.
  4. Mix ingredients: In a large mixing bowl, combine the browned beef, caramelized onions, uncooked rice, beef broth, French onion soup mix, cream of mushroom soup, garlic powder, salt, and pepper. Stir well.
  5. Assemble the casserole: Lightly grease a 9×13-inch baking dish and pour in the mixture, spreading it evenly.
  6. Bake covered: Cover the dish with foil and bake for 40-45 minutes, or until the rice is fully cooked and tender.
  7. Add cheese topping: Remove the foil, sprinkle the mozzarella and cheddar cheeses on top, and return to the oven.
  8. Bake uncovered: Continue baking for another 10-15 minutes, or until the cheese is melted and golden brown.
  9. Rest and serve: Let the casserole sit for 5-10 minutes before serving. Garnish with fresh parsley or crispy fried onions, if desired
