This French Onion Ground Beef and Rice Casserole is a rich and comforting dish loaded with savory flavors. Ground beef, caramelized onions, and rice are combined with a creamy sauce and topped with a bubbly layer of melted cheese. Ingredients
1 lb ground beef
1 cup white rice (uncooked)
1 large onion, thinly sliced
2 cups beef broth
1 packet (1 oz) French onion soup mix
1 can (10.5 oz) cream of mushroom soup
1 ½ cups shredded mozzarella cheese
1 cup shredded cheddar cheese
2 tbsp butter
½ tsp garlic powder
Salt and pepper (to taste)
Fresh parsley (optional, for garnish)
Crispy fried onions (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Caramelize the onions: In a large skillet, melt 2 tbsp butter over medium heat. Add the sliced onions and cook until golden and caramelized, about 10-12 minutes.
- Brown the beef: Push the onions to the side and add the ground beef to the skillet. Cook until browned, breaking it apart as it cooks. Drain any excess grease.
- Mix ingredients: In a large mixing bowl, combine the browned beef, caramelized onions, uncooked rice, beef broth, French onion soup mix, cream of mushroom soup, garlic powder, salt, and pepper. Stir well.
- Assemble the casserole: Lightly grease a 9×13-inch baking dish and pour in the mixture, spreading it evenly.
- Bake covered: Cover the dish with foil and bake for 40-45 minutes, or until the rice is fully cooked and tender.
- Add cheese topping: Remove the foil, sprinkle the mozzarella and cheddar cheeses on top, and return to the oven.
- Bake uncovered: Continue baking for another 10-15 minutes, or until the cheese is melted and golden brown.
- Rest and serve: Let the casserole sit for 5-10 minutes before serving. Garnish with fresh parsley or crispy fried onions, if desired
