4 salmon fillets (skinless, about 6 oz each)

Salt and black pepper, to taste

2 tablespoons olive oil

3 tablespoons unsalted butter

4 garlic cloves, minced

1 small yellow onion, finely chopped

1/2 cup sun-dried tomatoes, chopped

2 cups baby spinach

1 cup heavy cream

1/2 cup freshly grated parmesan cheese

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)


Instructions

  1. Pat salmon fillets dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear salmon for 4–5 minutes per side. Remove and set aside.
