Ingredients
1 lb ground chicken
1/2 cup breadcrumbs (preferably panko)
1/3 cup grated Parmesan cheese
1 egg
2 garlic cloves, minced
2 tbsp chopped parsley (plus more for garnish)
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1/2 cup shredded mozzarella (for topping)
1 tbsp olive oil
Optional: roasted garlic cloves for garnish
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet or grease a muffin tin.
- Mix chicken, breadcrumbs, Parmesan, egg, garlic, parsley, oregano, salt, and pepper in a bowl.
- Form into 4-6 mini loaves. Place on baking sheet. Drizzle with olive oil.
- Bake 20 minutes. Remove and top each with mozzarella.
- Bake 8-10 more minutes, until cheese is golden and internal temp hits 165°F.
- Rest 5 minutes. Garnish with parsley and optional roasted garlic. Serve warm.
