Ingredients

Steak Bites:

1.5 lbs sirloin steak, cut into bite-size cubes

3 tbsp butter (divided)

4 cloves garlic, minced

Salt and black pepper, to taste

1 tbsp olive oil

2 tbsp fresh parsley, chopped

1/4 cup grated Parmesan cheese

Cajun Pasta:

12 oz rotini pasta

1 tbsp Cajun seasoning

2 tbsp butter

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Optional garnish: chopped chives or green onions


Instructions

  1. Cook the pasta: Bring salted water to a boil. Cook rotini until al dente, then drain.
  2. Sear the steak: Season steak with salt and pepper. In a hot skillet with olive oil and 1 tbsp butter, sear steak pieces for 2-3 minutes per side. Set aside.
  3. Make garlic butter: In the same skillet, melt remaining butter. Add garlic and sauté for 1 minute. Return steak bites and toss to coat. Sprinkle parsley and Parmesan.
  4. Create the Cajun sauce: In another pan, melt butter and cook garlic. Stir in Cajun seasoning and cream. Simmer, then add Parmesan. Season to taste.
  5. Mix pasta and sauce: Combine cooked pasta with the Cajun sauce. Heat through.
  6. Serve: Plate the pasta and top with steak bites. Garnish with more Parmesan or herbs.
