Description

Ingredients

For the Muffins:

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

For the Cream Cheese Filling:

8 oz cream cheese, softened

¼ cup powdered sugar

½ teaspoon vanilla extract

For the Cinnamon-Sugar Coating:

½ cup unsalted butter, melted

¾ cup granulated sugar

1 ½ teaspoons ground cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin or line with paper liners.
  2. Make the cream cheese filling by mixing cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
  3. Prepare the muffin batter: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. In a large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, then mix in the vanilla extract.
  5. Gradually add the dry ingredients, alternating with buttermilk, mixing until just combined. Do not overmix.
  6. Fill the muffin cups halfway with batter. Add a teaspoon of the cream cheese filling in the center of each, then cover with the remaining batter.
  7. Bake for 18-22 minutes or until golden brown and a toothpick inserted into the muffin (avoiding the cream cheese center) comes out clean.
  8. Prepare the cinnamon-sugar coating by mixing the sugar and cinnamon in a shallow bowl. Melt the butter in a separate bowl.
  9. Coat the muffins: Once baked, let muffins cool for 5 minutes. Brush each muffin with melted butter and roll in the cinnamon-sugar mixture.
  10. Serve warm and enjoy!
