Description
Soft, buttery muffins filled with a gooey cream cheese center and coated in a sweet cinnamon-sugar mixture. These muffins are perfect for breakfast, brunch, or a delicious snack.
Ingredients
For the Muffins:
2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
For the Cream Cheese Filling:
8 oz cream cheese, softened
¼ cup powdered sugar
½ teaspoon vanilla extract
For the Cinnamon-Sugar Coating:
½ cup unsalted butter, melted
¾ cup granulated sugar
1 ½ teaspoons ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin or line with paper liners.
- Make the cream cheese filling by mixing cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
- Prepare the muffin batter: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, then mix in the vanilla extract.
- Gradually add the dry ingredients, alternating with buttermilk, mixing until just combined. Do not overmix.
- Fill the muffin cups halfway with batter. Add a teaspoon of the cream cheese filling in the center of each, then cover with the remaining batter.
- Bake for 18-22 minutes or until golden brown and a toothpick inserted into the muffin (avoiding the cream cheese center) comes out clean.
- Prepare the cinnamon-sugar coating by mixing the sugar and cinnamon in a shallow bowl. Melt the butter in a separate bowl.
- Coat the muffins: Once baked, let muffins cool for 5 minutes. Brush each muffin with melted butter and roll in the cinnamon-sugar mixture.
