Ingredients

4 medium ripe tomatoes, finely chopped or grated

1 small red onion, finely diced

2 spring onions, sliced

1/2 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/2 cup crumbled feta cheese (optional)

1 cup all-purpose flour

1/2 tsp baking powder

Salt and freshly ground pepper, to taste

Olive oil, for frying


Instructions

  1. Grate or finely chop the tomatoes. Drain excess liquid in a colander for 10–15 minutes.
  2. In a large bowl, combine tomatoes, red onion, spring onions, parsley, mint, and feta if using.
  3. Add flour, baking powder, salt, and pepper. Mix until a thick batter forms.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Drop spoonfuls of batter into the hot oil, flatten slightly, and fry for 2–3 minutes per side until golden.
  6. Remove and drain on paper towels.
  7. Serve warm with tzatziki or lemon wedges.
