Ingredients

For the Grilled Shrimp:

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp red pepper flakes (optional)

Juice of 1 lemon

For the Asparagus:

1 bunch asparagus, trimmed

1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt or mayonnaise

2 tbsp sour cream

1 tbsp lemon juice

1 clove garlic, minced

1/2 tsp Dijon mustard

1/2 tsp salt

1/4 tsp black pepper

1 tbsp chopped fresh chives (optional)


Instructions

  1. Prepare the Shrimp Marinade: In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, red pepper flakes (if using), and lemon juice. Add shrimp and toss to coat. Let marinate for 15 minutes.
  2. Prepare the Asparagus: Trim the tough ends of the asparagus and toss with olive oil, salt, and black pepper.
  3. Make the Creamy Garlic Sauce: In a small bowl, whisk together Greek yogurt (or mayonnaise), sour cream, lemon juice, minced garlic, Dijon mustard, salt, and black pepper. Stir in chives if using. Refrigerate until serving.
  4. Grill the Shrimp and Asparagus: Preheat a grill or grill pan over medium-high heat. Lightly oil the grates. Grill shrimp for 2-3 minutes per side until pink and slightly charred. Remove and set aside. Grill asparagus for 4-5 minutes, turning occasionally.
  5. Assemble the Bowl: Spread a dollop of creamy garlic sauce at the base of the bowl. Arrange the grilled shrimp and asparagus on top. Garnish with fresh chives and a squeeze of lemon. Serve immediately.
