Ingredients
3 ripe bananas (plus 1 extra for topping)
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter (softened)
3/4 cup brown sugar (plus 2 tbsp for topping)
2 large eggs
1 tsp vanilla extract
1/4 cup crushed pineapple (optional but recommended)
1/2 cup chopped pecans or walnuts (plus extra for topping)
1/4 cup shredded coconut (optional)
Non-stick spray or butter (for greasing the pan)
Instructions
- Preheat and Prep: Preheat oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray.
- Add Topping Layer: Sprinkle 2 tbsp brown sugar at the bottom of the pan. Add a layer of chopped pecans, then arrange banana slices over the top.
- Mash Bananas: In a large bowl, mash 3 bananas until smooth. Stir in crushed pineapple if using.
