Ingredients

1 ½ pounds ground beef

1 small onion, diced

1 can (10.5 oz) cream of mushroom soup

1 can (10.5 oz) cream of chicken soup

1 can (10 oz) diced tomatoes with green chiles, drained

4 cups diced frozen or fresh potatoes

2 cups shredded cheddar cheese (or a cheddar-jack blend)

½ teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

Optional toppings: chopped green onions, sour cream, jalapeño slices


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef and diced onion over medium heat until browned. Drain excess grease.
  3. Stir in cream of mushroom soup, cream of chicken soup, and diced tomatoes with green chiles. Add garlic powder, smoked paprika, salt, and pepper. Simmer for 2–3 minutes.
  4. In a greased 9×13-inch baking dish, spread the diced potatoes evenly.
  5. Pour the beef mixture over the potatoes and spread it out.
  6. Top with shredded cheese.
  7. Cover with foil and bake for 35 minutes.
  8. Remove foil and bake for another 10–15 minutes, until cheese is bubbly and golden.
  9. Let rest for 5 minutes, garnish with green onions or other toppings, and serve hot.
