Ingredients

1 zucchini, diced

1 can (14.5 oz) diced tomatoes

1 can (8 oz) tomato sauce

4 cups chicken broth

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 cup small pasta (ditalini, shells, or elbow macaroni)

2 cups fresh spinach or kale

Salt and black pepper to taste

Fresh basil leaves (optional, for garnish)

Grated Parmesan cheese (optional, for garnish)


Instructions

  1. Brown the Sausage – In a large pot or Dutch oven, cook the sausage over medium heat, breaking it apart until browned (about 5-7 minutes). Drain excess fat if needed.
  2. Sauté the Aromatics – Add the diced onion, garlic, and celery. Cook for 3-4 minutes until onions become soft and fragrant.
