Ingredients

1 lb kielbasa sausage, sliced into 1/2-inch rounds

1 1/2 lbs baby potatoes (red and gold), halved

1 small yellow onion, sliced

2 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp dried oregano

Salt and black pepper, to taste

2 tbsp chopped fresh parsley (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and halve baby potatoes. Slice kielbasa and onion.
  3. In a large bowl, toss potatoes, sausage, and onion with olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper.
  4. Spread everything in a single layer on a large rimmed baking sheet.
  5. Roast for 35–40 minutes, flipping halfway through, until potatoes are golden and sausage is caramelized.
  6. Remove from oven, sprinkle with fresh parsley, and serve hot.
