Ingredients

For the loaf:

1½ cups (190g) all-purpose flour

1 tsp baking powder

½ tsp salt

½ cup (115g) unsalted butter, softened

1 cup (200g) granulated sugar

2 large eggs

2 tbsp lemon zest (about 2 lemons)

¼ cup (60ml) fresh lemon juice

½ cup (120ml) milk

1 tsp vanilla extract

For the glaze:

1 cup (120g) powdered sugar

23 tbsp fresh lemon juice

Optional: extra lemon zest for garnish


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large mixing bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add lemon zest, lemon juice, and vanilla.
  5. Alternate adding the flour mixture and milk to the wet ingredients, beginning and ending with the dry.
  6. Pour the batter into the loaf pan and smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Mix glaze ingredients and drizzle over the cooled loaf. Garnish with lemon zest if desired.
