Ingredients

Meatloaf Layer:

1 1/2 pounds ground beef

1 egg

1/2 cup breadcrumbs

1 tbsp Worcestershire sauce

2 cloves garlic, minced

1 small onion, finely chopped

Salt and pepper to taste

Mashed Potato Layer:

34 medium russet potatoes, peeled and cubed

1/4 cup butter

1/2 cup milk

Salt and pepper to taste

Toppings:

1 cup shredded cheddar cheese

1/4 cup cooked and crumbled bacon (optional)

3 tbsp barbecue sauce

2 tbsp chopped green onions or chives


Instructions

  1. Boil peeled and cubed potatoes in salted water for 15–20 minutes until tender. Drain, mash with butter and milk, and season with salt and pepper.
  2. In a large bowl, mix ground beef, egg, breadcrumbs, Worcestershire sauce, garlic, onion, salt, and pepper.
  3. Press meat mixture into the bottom of a greased 9×9″ baking dish.
  4. Spread mashed potatoes evenly over the meatloaf layer.
  5. Sprinkle cheddar cheese over the mashed potatoes.
  6. Bake at 375°F (190°C) for 25–30 minutes or until meat is cooked through and cheese is melted.
  7. Drizzle with barbecue sauce, add bacon if desired, and top with green onions.
  8. Let rest 5 minutes before serving.
