Ingredients

1 lb ground beef

8 oz cream cheese, softened

1 cup sour cream

1 packet taco seasoning

1 (10 oz) can Rotel tomatoes with green chilies, drained

2 cups shredded Mexican blend cheese (divided)

1/2 cup cooked and crumbled bacon

1/4 cup chopped green onions (for topping)

Tortilla chips, for serving


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook and crumble the ground beef until no longer pink. Drain excess grease.
  3. In a mixing bowl, combine cream cheese, sour cream, and taco seasoning. Stir until smooth.
  4. Fold in the drained Rotel tomatoes and half of the shredded cheese.
  5. Add the cooked ground beef and mix until everything is well combined.
  6. Transfer to a greased baking dish and spread evenly.
  7. Top with the remaining cheese, crumbled bacon, and chopped green onions.
  8. Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
  9. Serve hot with tortilla chips.
