12 tbsp cold water

200g (7 oz) semi-sweet or dark chocolate, finely chopped

3/4 cup heavy cream

1 tbsp butter (optional, for shine)

1 tsp pure vanilla extract

Toppings (optional):

Chocolate curls or shavings

Sea salt flakes


Instructions

  1. Prepare the tart dough: Combine flour, powdered sugar, and salt. Cut in the cold butter until the texture resembles crumbs. Mix in the egg yolk and cold water until dough forms. Chill for 30 minutes.
  2. Preheat and shape: Roll out dough to 1/8-inch thickness, cut rounds, and press into mini tart pans or a greased muffin tin. Prick bases with a fork.
  3. Bake the shells: Bake at 350°F (175°C) for 12–15 minutes until golden. Cool completely.
  4. Make ganache: Pour heated cream over chopped chocolate. Let sit 1–2 minutes, then stir until smooth. Add butter and vanilla.
  5. Fill and chill: Spoon or pipe ganache into cooled tart shells. Chill for at least 1 hour.
