3 1/4 cups all-purpose flour
1 packet (2 1/4 tsp) instant yeast
1 tbsp sugar
1 tsp salt
1 cup warm water (110°F)
2 tbsp unsalted butter, melted (plus more for brushing)
12 pieces mozzarella string cheese or mozzarella cubes
1/4 cup chopped fresh rosemary (plus more for garnish)
1/2 cup finely grated Parmesan cheese
Coarse sea salt, for sprinkling
1/4 cup baking soda (for boiling)
8 cups water (for boiling)
Instructions
- Mix warm water, sugar, and yeast in a large bowl. Let sit 5 minutes until foamy.
- Stir in melted butter, salt, and flour. Mix until a dough forms.
- Knead on a floured surface for 5-7 minutes. Place in greased bowl, cover, and rise for 1 hour.
- Preheat oven to 425°F. Line baking sheet with parchment.
- Divide dough into 12 pieces. Flatten each, add mozzarella, seal, roll, and shape into pretzels.
- Boil water with baking soda. Boil each pretzel 20-30 seconds. Drain and place on sheet.
- Brush with butter, sprinkle with rosemary, Parmesan, and sea salt.
- Bake 12-15 minutes until golden. Brush with more butter. Cool slightly and serve warm.
