Ingredients
1 1/2 cups graham cracker crumbs
1/3 cup melted butter
2 tbsp granulated sugar
1 package (8 oz) cream cheese, softened
1/2 cup powdered sugar
1/2 tsp vanilla extract
1 can (11 oz) mandarin oranges, drained
1 package (3 oz) orange gelatin (Jell-O)
2/3 cup boiling water
1/2 cup cold water
1 tub (8 oz) whipped topping
Optional: extra mandarin orange slices and mint leaves for garnish
Instructions
- Mix graham cracker crumbs, melted butter, and sugar. Press into a 9-inch pie dish and refrigerate.
- Dissolve orange gelatin in boiling water. Stir in cold water and let cool to room temp.
- Beat cream cheese until smooth. Add powdered sugar and vanilla; blend well.
- Slowly mix in the cooled gelatin.
- Fold in whipped topping and drained mandarin oranges.
- Pour into crust and smooth the top.
- Chill for at least 4 hours, preferably overnight.
- Garnish with extra oranges and mint before serving.
