1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

2 tbsp granulated sugar

1 tsp baking powder

1/2 tsp baking soda

3/4 cup buttermilk (or milk + 1 tbsp vinegar)

1/4 cup brewed coffee, cooled

1 large egg

2 tbsp melted butter (plus more for cooking)

1/2 tsp vanilla extract

1/3 cup Nutella (plus more for topping)

Fresh raspberries (optional, for garnish)

Chocolate chips or shavings (optional, for garnish)


Instructions

  1. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix buttermilk, brewed coffee, egg, melted butter, and vanilla extract.
  3. Gradually combine the wet and dry ingredients, mixing until just blended. Do not overmix.
  4. Heat a non-stick skillet over medium heat with a little butter.
  5. Pour 1/4 cup batter per pancake and cook until bubbles form. Flip and cook until done.
