Ingredients
1 tablespoon olive oil
1/2 pound Italian sausage (mild or spicy)
1/2 cup mini pepperoni slices (or chopped pepperoni)
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional)
2 cups uncooked rotini pasta (or any short pasta)
2 1/2 cups chicken broth
1 1/2 cups marinara or pizza sauce
1/2 cup diced tomatoes (canned or fresh)
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh parsley or basil, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
- Add onion and cook until soft. Stir in garlic and sauté for another minute.
- Stir in oregano, basil, red pepper flakes, and pepperoni. Cook for 1–2 minutes.
- Pour in pasta, chicken broth, marinara sauce, and diced tomatoes. Stir well.

- Stir in half the mozzarella and all the Parmesan. Mix well.
