Ingredients

1 lb beef sirloin or ribeye steak, thinly sliced

20 oz cheese tortellini (fresh or refrigerated)

1 tablespoon olive oil

1 medium onion, finely chopped

1 green bell pepper, diced (optional)

2 cloves garlic, minced

1 cup heavy cream

1 cup beef broth

1 ½ cups shredded provolone cheese

½ teaspoon black pepper

Salt, to taste

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)


Instructions

  1. Bring a pot of salted water to a boil and cook the tortellini according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced beef, season lightly with salt and pepper, and sear for 2-3 minutes per side. Remove from skillet.
  3. In the same skillet, sauté onions and green bell peppers until soft, about 3-4 minutes. Add minced garlic and cook for another minute.
  4. Stir in beef broth and Worcestershire sauce, scraping up any browned bits. Let simmer for 2 minutes.
  5. Add heavy cream and bring to a gentle simmer. Cook for 3-5 minutes to slightly thicken the sauce.
  6. Return beef to the skillet, add the cooked tortellini, and sprinkle in the shredded provolone cheese. Stir until the cheese melts and everything is coated.
  7. Garnish with fresh parsley and additional black pepper if desired.
