Ingredients

1 lb ribeye or sirloin steak, trimmed

Salt and freshly ground black pepper, to taste

2 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

1 cup heavy cream

1/2 cup Gorgonzola cheese, crumbled

3/4 cup Parmesan cheese, finely grated

1/2 tsp cracked black pepper

8 oz fettuccine pasta

Fresh parsley, chopped (for garnish)

Extra grated Parmesan, for topping


Instructions

  1. Bring steak to room temperature and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear steak for 3–4 minutes per side for medium-rare. Remove and let rest under foil.
  3. Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
  4. In the steak skillet, melt butter and sauté garlic for 30 seconds.
  5. Add heavy cream, then Gorgonzola and Parmesan. Stir until melted and creamy.
  6. Stir in cracked black pepper. Add a splash of pasta water if sauce is too thick.
  7. Toss in cooked pasta and coat with sauce.
  8. Slice steak against the grain and serve on top of pasta.
  9. Garnish with parsley, extra Parmesan, and freshly cracked pepper.
