Ingredients

1 ½ cups all-purpose flour
1 ½ tsp baking powder

1 tsp cornstarch mixed with 1 tbsp water

8 oz cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract

Instructions
- Preheat and Prepare – Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Mix Dry Ingredients – In a bowl, whisk together the flour, baking powder, and salt.
- Cream Butter & Sugar – In a large bowl, beat the softened butter and sugar until light and fluffy.
- Incorporate Wet Ingredients – Add eggs one at a time, mixing well. Stir in vanilla, lemon juice, and lemon zest.
- Combine Everything – Gradually add the dry ingredients, alternating with milk, and mix until just combined.
- Bake the Cupcakes – Divide the batter evenly into liners, filling each about ⅔ full. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
- Prepare Raspberry Filling – In a saucepan over medium heat, cook raspberries, sugar, and lemon juice. Add cornstarch slurry and stir until thickened. Let cool.
- Core & Fill Cupcakes – Use a cupcake corer or small spoon to remove the center of each cupcake. Fill with 1 teaspoon of raspberry filling.
- Make the Frosting – Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
