Ingredients

For the Cupcakes:

1 ½ cups all-purpose flour

1 ½ tsp baking powder

¼ tsp salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

2 tbsp fresh lemon juice

1 tbsp lemon zest

½ cup whole milk

For the Raspberry Filling:

¾ cup fresh raspberries

2 tbsp granulated sugar

1 tsp lemon juice

1 tsp cornstarch mixed with 1 tbsp water

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

For Garnishing:

Fresh raspberries

Extra lemon zest


Instructions

  1. Preheat and Prepare – Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Mix Dry Ingredients – In a bowl, whisk together the flour, baking powder, and salt.
  3. Cream Butter & Sugar – In a large bowl, beat the softened butter and sugar until light and fluffy.
  4. Incorporate Wet Ingredients – Add eggs one at a time, mixing well. Stir in vanilla, lemon juice, and lemon zest.
  5. Combine Everything – Gradually add the dry ingredients, alternating with milk, and mix until just combined.
  6. Bake the Cupcakes – Divide the batter evenly into liners, filling each about ⅔ full. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
  7. Prepare Raspberry Filling – In a saucepan over medium heat, cook raspberries, sugar, and lemon juice. Add cornstarch slurry and stir until thickened. Let cool.
  8. Core & Fill Cupcakes – Use a cupcake corer or small spoon to remove the center of each cupcake. Fill with 1 teaspoon of raspberry filling.
  9. Make the Frosting – Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
  10. Frost & Garnish – Pipe or spread frosting onto the cupcakes. Garnish with a fresh raspberry and a sprinkle of lemon zest.
