1 lb (450 g) rigatoni pasta
1 tbsp olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
1 lb (450 g) ground beef (or a mix of pork and beef)
1 cup whole milk
1 cup dry white wine (optional)
1 can (28 oz) crushed tomatoes
2 tbsp tomato paste
1 tsp dried oregano
1 tsp dried basil
Salt and freshly ground black pepper, to taste
Fresh parsley or basil, chopped (for garnish)
Freshly grated Parmesan cheese (for serving)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add chopped onion, carrot, and celery. Sauté until soft and onions are translucent, about 8–10 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add ground meat, breaking it up with a spoon. Cook until browned, about 7–10 minutes. Season with salt and pepper.
- Pour in white wine (if using) and let it simmer until mostly evaporated.
- Stir in tomato paste and cook for 2 minutes. Add crushed tomatoes, oregano, basil, and milk. Stir well.
- Reduce heat to low and simmer sauce uncovered for 30–45 minutes, stirring occasionally.
- Meanwhile, cook rigatoni in salted boiling water according to package directions. Drain and reserve 1/2 cup pasta water.
- Toss cooked pasta with sauce. Add reserved pasta water if needed to loosen the sauce.
