½ teaspoon paprika (optional, for a smoky kick)

½ teaspoon crushed red pepper flakes (optional, for spice)

½ cup grated Parmesan cheese

1 tablespoon chopped fresh parsley (for garnish)

For the Broccoli:

2 cups broccoli florets

1 tablespoon olive oil

¼ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon garlic powder

¼ cup grated Parmesan cheese


Instructions

  1. Preheat the Oven – Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Potatoes – In a large mixing bowl, toss the cubed potatoes with olive oil, salt, black pepper, garlic powder, paprika, and red pepper flakes. Add Parmesan cheese and mix again.
  3. Arrange on a Baking Sheet – Spread the potatoes in a single layer on one side of the baking sheet, ensuring they have space to crisp up.
  4. Season the Broccoli – In the same mixing bowl, toss broccoli florets with olive oil, salt, black pepper, and garlic powder.
  5. Add Broccoli to the Baking Sheet – Place the broccoli on the other side of the baking sheet, keeping it separate from the potatoes.
  6. Roast in the Oven – Bake for 25-30 minutes, flipping everything halfway through. Potatoes should be golden brown and crispy, and broccoli slightly charred.
  7. Garnish and Serve – Remove from the oven, sprinkle extra Parmesan cheese over the broccoli, garnish with fresh parsley, and serve hot.
