Ingredients

2 large boneless, skinless chicken breasts

1 cup fresh spinach (lightly sautéed)

1/2 cup roasted red peppers (drained and chopped)

3/4 cup shredded or sliced mozzarella cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

Toothpicks or kitchen twine, for securing

Fresh chopped parsley, for garnish


Instructions

  1. Sauté spinach in a pan with a bit of olive oil until wilted. Mix it in a bowl with chopped roasted red peppers and mozzarella.
  2. Slice each chicken breast horizontally to create a pocket. Season both inside and outside with salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Stuff each pocket with the spinach mixture. Use toothpicks or twine to secure the edges.
  4. Preheat oven to 375°F (190°C). Sear the stuffed chicken in a hot oven-safe skillet with olive oil for 3-4 minutes per side.
