Ingredients
2 cups shredded cooked chicken (rotisserie or boiled)
1 can (10 oz) Rotel diced tomatoes with green chilies (drained)
8 oz cream cheese (softened)
1/2 cup mayonnaise
1/2 cup sour cream
1 cup shredded cheddar cheese (or Mexican blend)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika (optional)
Salt and black pepper to taste
1/4 cup chopped fresh cilantro or green onions (for garnish)
Instructions
- Prepare Ingredients: Shred the cooked chicken and drain the Rotel tomatoes well.
- Mix the Base: In a large bowl, combine softened cream cheese, mayonnaise, and sour cream. Blend until smooth.
- Combine Everything: Stir in the shredded chicken, drained Rotel, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
- Chill or Bake: For a cold dip, cover and refrigerate for at least 30 minutes. For a warm dip, bake at 350°F (175°C) for 15 minutes until bubbly.
- Garnish & Serve: Sprinkle with chopped cilantro or green onions and serve with tortilla chips, crackers, or veggies.
